Buttermilk Biscuits

2 cups flour (all purpose)
4tsp baking powder
1/4 tsp baking soda
3/4 tsp salt
2tbs cold butter (chopped into cubes)
2tbs shortning (or lard)
1 cup Buttermilk

sift dry ingredients, crumble butter and shortning with dry mix (do it fast to make sure the fats don't melt), make a well in the middle of the bowl and pour in the buttermilk. Combine mixture, don't over-mix, around six to seven stirs are perfect. On a floured counter or board pour out mixture... kneed a few times, again don't over-mix, push or roll out until about an inch thick,, cut with a one inch cutter, place side by side on a cookie-sheet, almost pushing together,, bake at 450 for around 15 minutes until golden on-top

When you remove from oven brush the tops with melted butter for a golden look and buttery flavor.. Serve warm with butter and honey, or country gravy with sausage...
