1 Medium Chicken Breast
6 Stalks of Asparagus
2 Tablespoons of Pesto
1 Ready Made Pizza Dough (Trader Joe's is my favorite)
1 cup Shredded Mozzarella Cheese
Proof Pizza Dough, (take out and set on counter to warm up)
Dice Chicken, brown chicken in olive oil. Slice Asparagus diagonally (just looks good) Add to chicken once browned, season with salt and pepper. Once three quarters of the way cooked, turn off heat, add pesto sauce.
Cut pizza dough in quarters, roll out to about 6 inch squares, spread a handful of cheese over half of the square. Put about three tablespoons of chicken and asparagus on top of the cheese, add a little more cheese and fold over the rest of the pizza dough.. Do a simple crimp or braid the dough around edges.. Make sure that you have completely sealed the dough. Brush some olive oil over the top of the mini calzones. If you have it sprinkle sea salt and freshly ground pepper on top. Cut three small slits in the top to allow the steam to escape. Bake at 425 until golden brown, around 20 minutes.. Enjoy
